Spinach and Ricotta Lasagne Roll Ups

Ingredients
- 8 lasagne sheets
- 2 cups ricotta cheese
- 3/4 cup grated mozzarella cheese
- 1/2 cup grated Parmesan cheese (optional)
- 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
- 1 egg
- 5 fresh basil leaves
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups marinara sauce (store-bought or homemade)
- 1 cup grated mozzarella cheese
Instruction
- Preheat your oven to 190°C.
- In a large bowl, combine ricotta cheese, mozzarella cheese, parmesan cheese, chopped spinach, egg, basil, Italian seasoning, salt, and pepper. Mix until well combined.
- Spread about 1/4 cup of the ricotta and spinach mixture onto each lasagne sheet, spreading it evenly.
- Roll up each sheet from one end to the other, like a jelly roll.
- Place the lasagne roll-ups in Pyrex bake and store container.
- Pour marinara sauce over the top of the roll-ups. Sprinkle the mozzarella over the top.
- Bake for 20 minutes or until the cheese is melted and bubbly.
- Allow the roll-ups to cool for a few minutes before serving. Garnish with fresh basil or parsley if desired.
For Extra Flavour: You can add some red pepper flakes to the sauce for a bit of heat.
Make Ahead: These roll-ups can be assembled ahead of time and refrigerated for up to 24 hours before baking. Just add an extra 10 minutes to the baking time if baking straight from the fridge.
