Ingredients

  • 2 ripe bananas, mashed
  • 1/3 cup melted butter or coconut oil
  • 1/2 cup maple syrup
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon (optional)
  • Chopped nuts for decorating (optional)

Instruction

  1. Preheat your air fryer to 160°C.
  2. In a mixing bowl, combine mashed bananas, melted butter or coconut oil, maple syrup, beaten egg and vanilla extract. Mix well.
  3. Sift in flour, baking powder, and cinnamon (if using).
  4. Mix until just combined. Be careful not to overmix.
  5. Grease Pyrex glass bakeware dishes.
  6. Pour the batter into the greased dishes, spreading it evenly and sprinkle with nuts, if using.
  7. Place in the preheated air fryer basket.
  8. Bake in the air fryer at 160°C for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Once cooked, carefully remove the banana bread from the air fryer and let it cool for 10 minutes.
  10. After 10 minutes, remove the banana bread from the baking dish and transfer it to a wire rack to cool completely before slicing and serving.
