Ingredients

  • 4-5 soft tortillas
  • 1 cup cooked or canned black beans
  • 1 cup corn kernels
  • 1 green or red capsicum, chopped
  • 1/2 red onion, finely chopped
  • 1 cup chopped coriander
  • 1 teaspoon taco seasoning
  • 2 cups tomato baking sauce
  • 1/2 cup grated cheese
  • Additional coriander, for serving

Instruction

  1. Preheat your oven to 190°C.
  2. In a mixing bowl, combine black beans, corn kernels, capsicum, onions, chopped coriander, and taco seasoning.
  3. Spread a thin layer of tomato baking sauce on the bottom of a Pyrex meal box.
  4. Place a tortilla over the sauce. Spoon a quarter of the bean and vegetable mixture over the tortilla. Repeat the layers, ending with the remaining tomato baking sauce over the top and sprinkle with grated cheese.
  5. Bake in the preheated oven for 20-25 minutes, until heated through and the cheese is melted and bubbly.
  6. Serve hot, garnished with additional chopped coriander if desired. Store in the fridge or freezer to enjoy later!
