Prep
• Finely chop or crush garlic
• Chop potatoes into 1.5 cm cubes (leaving the skin on for those extra nutrients!) and place in a bowl
• Place chicken pieces in a separate bowl
• Juice the lemon
• In a bowl, add olive oil, lemon juice, parmesan, garlic, smoked paprika, oregano, thyme, salt, and pepper. Mix to combine well
• Pour half the mixture over the potatoes and the other half over the chicken pieces. Toss. Let marinate for 30 minutes or longer if time allows.
Cook
• Place the potatoes into the air fryer basket, with the chicken pieces in a single layer on top.
• Cook at 200°C for 40mins, turning the chicken over half way through the cooking time - the Instant Vortex Plus Versazone XXL Air Fryer will notify you when its halfway through cooking time, so you can just set & forget!
• Once cooking has finished, place in a serving dish, and drizzle over any juices from the air fryer basket.
• Garnish with your choice of fresh herbs - chopped coriander was used in this recipe.
